Hot day. Cool salad.
Oasis Summer Salad ( Yours Truly) makes 2 servings
- 1 can chickpeas
- 1/3 cup marinated artichoke hearts
- 1/2 cup halved cherry tomatoes
- 1/3 cup diced roasted red peppers
- 1/4 cup mixed and diced kalamata, black or Spanish olives
- 1 tablespoon diced fresh mint
- 1 tablespoon diced oregano
- 1 tablespoon diced basil
- 2 tablespoons crumbled feta or goat cheese
- 1/4 cup extra virgin olive oil
- 1 tablespoon lemon juice or to taste
- dash of salt and pepper
- 1 tablespoon tahini (optional: this will add some creaminess and take away the acidic bite of the lemon and artichoke hearts if preferred).
- Combine all of the salad ingredients in a salad bowl.
- Toss salad with dressing. Chill in refrigerator if desired.
