Oasis Summer Salad

Hot day. Cool salad.

Oasis Summer Salad ( Yours Truly) makes 2 servings



  • 1 can chickpeas
  • 1/3 cup marinated artichoke hearts
  • 1/2 cup halved cherry tomatoes
  • 1/3 cup diced roasted red peppers
  • 1/4 cup mixed and diced kalamata, black or Spanish olives
  • 1 tablespoon diced fresh mint
  • 1 tablespoon diced oregano
  • 1 tablespoon diced basil
  • 2 tablespoons crumbled feta ¬†or goat cheese


  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lemon juice or to taste
  • dash of salt and pepper
  • 1 tablespoon tahini (optional: this will add some creaminess and take away the acidic bite of the lemon and artichoke hearts if preferred).
  1. Combine all of the salad ingredients in a salad bowl.
  2. Toss salad with dressing. Chill in refrigerator if desired.
